Zubereitung

Für das Linsensalat Rezept zunächst die Puy-Linsen 40-45 Minuten bei mittlerer Hitze garen. Rotkohl putzen, äußere Blätter und Strunk entfernen, Kohl vierteln, in schmale Streifen schneiden. In einer Schüssel mit kochendem Wasser überbrühen. 5 Minuten ziehen lassen, abgießen.

Essig, Apfelsaft, Zitronensaft, Öl, Honig für den vegetarischen Linsensalat verrühren und mit Gewürzen, Salz und Pfeffer abschmecken. Nüsse anrösten und grob hacken. Die Birne vierteln, in hauchdünne Spalten schneiden und mit Zitronensaft beträufeln.

Abschließend die Puy-Linsen abgießen, lauwarm mit Kohl, Birne und Marinade mischen. Den Linsensalat 20 Minuten ziehen lassen, abschmecken und mit Nüssen und dem in kleine Würfel geschnittenen Saint Agur anrichten.
