Rote Rübe in Scheiben schneiden. Äpfel waschen, halbieren, entkernen und grob reiben. Die Walnüsse grob hacken.

Olivenöl, Balsamico und Brunch verrühren. Mit Zitronensaft, Zitronenschale, Salz, Pfeffer und Sirup abschmecken.

Rote Rübe, Äpfel und Walnüsse in eine Schüssel geben, mit dem Dressing vermengen und den Fetakäse über den Salat bröseln anschließend mit Petersilie garniert servieren.
Tipp für den Rote-Bete-Salat:
Beim Schneiden der roten Rübe aufpassen, dass nichts auf die Kleidung kommt! Die Farbe ist nämlich nur schwer wieder aus Textilien herauszubekommen.
