Zubereitung

Für das Carpaccio: Rote Rüben in dünne Scheiben hobeln. Caprice des Dieux in dünne Scheiben schneiden. Beides abwechselnd wie ein Carpaccio dekorativ auf einer Platte anrichten.

Äpfel schälen, Kerngehäuse entfernen und in sehr kleine Würfel schneiden. Koriandersamen mit einem Mörser zermahlen. Essig mit Apfelsaft verrühren. Apfelwürfel und die gemörserten Koriandersamen untermischen. Das Öl unterrühren und mit Salz sowie Pfeffer abschmecken.

Das Carpaccio mit der Marinade beträufeln. Koriander waschen, trocken schütteln, Blättchen abzupfen, hacken und auf dem Rote-Rüben-Carpaccio verteilen.
